  • Roast for 30โ€“35 minutes, stirring halfway, until tender and lightly browned.
  • Preheat the oven to 400ยฐF (200ยฐC).
  • Place the broccoli, carrots, bell pepper, and onion on a large baking sheet.
  • Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  • Roast for 30โ€“35 minutes, stirring halfway, until tender and lightly browned.
  • Heat a large skillet over medium heat.
  • Add the marinated chicken and cook for 6โ€“7 minutes per side, until golden and fully cooked (internal temperature 165ยฐF / 74ยฐC).
  • Remove from heat and let rest for 5 minutes.
  • Serve the chicken alongside the roasted vegetables.
  • Spoon any remaining lemon-garlic juices from the pan over the chicken for extra flavor.
