- Place the broccoli, carrots, bell pepper, and onion on a large baking sheet.
- Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
- Roast for 30โ35 minutes, stirring halfway, until tender and lightly browned.
- Preheat the oven to 400ยฐF (200ยฐC).
- Place the broccoli, carrots, bell pepper, and onion on a large baking sheet.
- Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
- Roast for 30โ35 minutes, stirring halfway, until tender and lightly browned.
- Heat a large skillet over medium heat.
- Add the marinated chicken and cook for 6โ7 minutes per side, until golden and fully cooked (internal temperature 165ยฐF / 74ยฐC).
- Remove from heat and let rest for 5 minutes.
- Serve the chicken alongside the roasted vegetables.
- Spoon any remaining lemon-garlic juices from the pan over the chicken for extra flavor.
