Ingredients
  

  • 1 medium apple grated (keep the skin on for more fiber)
  • 1 cup shredded purple cabbage
  • 1 medium carrot shredded
  • 1 tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • Dash of ground cumin
  • Sea salt to taste

Instructions
 

  • In a medium bowl, combine the grated apple, shredded cabbage, and carrot.
  • In a small bowl or jar, whisk together the apple cider vinegar, olive oil, cumin, and sea salt.
  • Pour the dressing over the vegetables and toss well until evenly coated.
  • Let the salad sit for 5–10 minutes to allow flavors to meld, or serve immediately.
