sliced into ½-inch thick rounds or half-moons

garlic powder

dried oregano or Italian seasoning
Salt and freshly ground black pepper
to taste
Optional: Freshly grated Parmesan cheese or lemon zest for topping
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, toss the zucchini slices with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
Spread the zucchini in a single layer on the baking sheet, making sure they’re not overlapping.
Roast in the preheated oven for 18–20 minutes, flipping once halfway through, until golden brown and tender.
Optional: Sprinkle with Parmesan cheese or lemon zest before serving for an extra layer of flavor.
