Ingredients
  

  • 1 Granny Smith apple julienned (with skin)
  • ½ medium fennel bulb thinly sliced (fronds reserved for garnish)
  • ½ cup plain Greek yogurt
  • 1 tsp lemon juice
  • 1 tsp honey or monk fruit sweetener optional
  • Salt and freshly ground pepper to taste
  • Optional: 1 tbsp chopped fresh dill or fennel fronds

Instructions
 

  • In a mixing bowl, combine the julienned apple and thinly sliced fennel.
  • In a separate small bowl, whisk together the Greek yogurt, lemon juice, honey (if using), salt, and pepper.
  • Pour the dressing over the slaw and toss gently to coat.
  • Garnish with chopped dill or fennel fronds, if desired.
  • Serve immediately or chill for 10–15 minutes before serving for enhanced flavor.
